The story
Liquid Macro didn't start in a lab or a co-packer's facility. It started with a scale, a pH meter, and a problem nobody had solved well.
The problem
If you're eating for protein, you already know the routine. Grilled chicken. White rice. Repeat.
The options for fixing it are bad. Regular sauces add sugar and calories and give you nothing back. Protein powders are a separate step in a shaker cup that has nothing to do with the meal in front of you.
So the question was simple: why isn't the protein just in the sauce?
Turns out there's a reason. Protein is difficult to work with — it denatures with heat, goes astringent in acid, and behaves nothing like the thickeners a normal sauce is built on. Getting 52 grams of it into a bottle that still pours, still tastes good, and is still safe to eat took a lot longer than expected.
The founder
Liquid Macro is made by Zach Hewitt, founder of Hewcore Corp., out of Lewiston, Idaho.
Every formula revision, pH reading, batch log and label draft has come from one person working nights between school — formulating at home, producing in a licensed commercial kitchen, and learning the food-manufacturing side the slow way.
That's not a marketing angle. It's just what's true, and it's why the product has changed as much as it has. There's nobody to hand a bad batch to and no incentive to ship one.
Development log
A short version of what actually changed, and why. Most of it was learning what didn't work.
How it's made
Not a marketing word. It describes the actual production method — and the reason the recipe could change five times.
Paprika and white pepper are heated in avocado oil at a controlled temperature, then pressed and strained. Color and flavor come out dissolved in the oil rather than sitting as dry particles in the bottle.
Garlic and onion go into plain water first — their flavor is enzyme-driven and only develops before acid is added. Order matters here more than almost anywhere else in the process.
Citric acid is dissolved and titrated in while pH is measured with a calibrated probe. The batch does not move forward until it reads inside the safe range. No exceptions, no estimating.
Protein and cooled oil go in last, the sauce is filled to weight with minimal headspace, induction sealed, and refrigerated immediately. Lot number and date go on every bottle.
Where it's going
Liquid Macro is a refrigerated acidified food, which means it's regulated like one. Before a single bottle is sold there's a plan review, a process authority evaluation, a licensed facility inspection, and label approval.
That work is underway. It's slower than launching and quieter than a countdown, and it's the difference between a product and a science project.
Leave your number and you'll be first to know when the first batch is ready. Nothing else in between.
